“Let’s Get Figgy With It” Granola Clusters {Gluten Free & Plant Based}

 1 Box of Maine Crisp Fig & Thyme Plant Based Crisps
 2 cups Gluten Free Oats
 1 cup dried figs
 ¼ cup Real Maple Syrup
 ¼ cup Vegan Butter (Or Standard Butter) of Choice
 1 tsp Pure Vanilla Extract
 1 cup chopped nuts (optional)

Pre Heat Oven to 325. Line a cookie sheet with parchment paper.

In a small saucepan add the butter & maple syrup. Heat on medium for about 5 minutes until the mixture has thickened and has big bubbles. Be careful not to overcook or it can harden.

Open your box of Maine Crisp Fig & Thyme Crackers. Before you open the plastic bag, with your fist hit it a few times to break crisps into pieces. As fun as this step is ;) Be careful not to crush into a dust. Then pour into a mixing bowl.
Add the 2 cups of gluten free oats.

On a cutting board, cut your dried figs into small bite size pieces.
I cut them into roughly 8ths. Essentially we just don't want massive figs in the mix! The smaller the better! Add it to the oats & crisps. If you would like to add nuts, you can do so at this time.

When the stovetop mixture is done, stir in vanilla. Then pour over the dry mixture. Toss generously until the whole mixture is well combined.
Pour on your prepare cookie sheet.
If you want loose muesli you will want to scatter the mixture across the pan.
If you want clusters you will want to pack the mixture together in one place and press down before baking

Bake for 30 minutes or until the top of the oats is just golden.
Let cool completely before breaking, if you would like large clusters. If you like loose granola you can enjoy immediately!
