I was a nanny during college and I remember the family I worked for had a frother. I was cleaning up the dishes and I asked, “what is this.” The mom proceeded to get out some milk and showed me what it did and my world was forever changed. I realized in that moment that I didn’t need to pay $6+ for an iced latte AND more importantly that I could make them better! I ended up getting my own (inexpensively off of amazon) and played around with it. I realized how I could customize the latte the way I wanted without agonizing over standing at a counter explain exactly what I wanted for 10 minutes. Also, how I could make it work for my health instead of against it with simple swaps.
In this recipe you will notice that I don’t use espresso because…well…I don’t have an espresso maker yet. BUT what I do have is access to some pretty wonderful cold brew that will work all the same. Wherever we use milk, you can use your milk of choice based on you and your guests needs! Keep in mind, if you want to make this ahead of time to store in the fridge, you absolutely can! However, I would make the foam fresh because it doesn’t stay whipped for long.

Prepare two glasses with ice.
Pour milk and maple syrup into a pitcher with a spout. You can use a measuring pitcher or one that comes with your frother. Ideally, you just need something with the pointed tip.
Heat the milk and maple syrup in the microwave for 1 and a half minutes.
With your frother , froth the milk until it has at least doubled in size, this could take a few minutes. You will want to see a thick foam layer.
Pour in one cup of coffee.
The ratio I follow is 1 part coffee, 1 part milk mixture. If you like your lattes very light, you can mix this up to your liking but note you may need to make more of the mixture!
Using a spoon, hold back the foam while pouring approx 1 cup of milk into each glass.
Then carefully, pour or spoon the foam that is remaining on top of the coffee/milk mixture.
To finish it off sprinkle on a few dashes of cinnamon. This adds a layer of beauty and flavor
Then you're ready to serve!
