Summertime comes with outdoor activities, spontaneous gatherings and the need for delicious no-cook recipes. Salads are my personal go-to summer meal, but I always find myself in a rut. When we were first creating this recipe, I was talking with the team because I knew I wanted to take it in a festive direction, focusing on red, white & blue. I asked “should I focus on beets or berries” They quickly responded…”never beets, always berries”. While I can never turn down a good roasted beet with some salt and olive oil, I was outnumbered and focused on the seasonal classics! Honestly though, they never disappoint. Anyone else with me on team beet?
This recipe pulls together everything delicious about the season, while adding some of the most wonderful flavor additions. With the ability to pull this recipe together in 15 minutes, you can feel confident that the presentation will be inviting and the combination of all the ingredients will leave your guests coming back for more. We are proudly using crisps from our partner Maine Crisp as the croutons in this recipe. They not only are filled with crunch and fruity flavor, they are also naturally gluten free! If you need to cater to a dairy free guest be sure to use their Fig cracker option and you can also simply omit the cheese!

Looking to make this salad in advanced? If you are looking to make this salad ahead of time, proceed with the following instructions but simply add the crisps right before serving for optimal crunch!
In a large bowl add half of the lettuce
Finely slice strawberries, radicchio and scallions
In the bag it came in (or a zip-lock bag) crush Maine Crisp Cracker until broken for desired crouton size
Add half of each ingredient on top of lettuce in any order and then add remaining lettuce on top to fill bowl
*If you are making this salad ahead of time wait to add Maine Crisps until it is being served to preserve crunch
Add the rest of each ingredient from smallest to biggest for best presentation and top with Maple Balsamic Dressing. Plate and serve.
Put all ingredients in a wide mouth mug, mason jar or measuring cup
Use immersion blender until mixed well, and creamy
